Combine the gin, elderflower cordial, grapefruit oleo saccharum and fir in a cocktail shaker. Shake and double strain over ice in an Old Fashion style glass. Top up with soda water.
For the grapefruit saccharum, allow 3+ hours prep time. Take 1 grapefruit, 2 cups of white sugar and 1 cup of boiling water. Peel the grapefruit and place the peel in a mixing bowl. Cover with the sugar and leave to sit in the fridge for 3 or more hours. Take it out of the fridge and pour in the boiling water, dissolving the sugar. Strain the syrup through a fine sieve. You can bottle this, and it will store for up to a month.
Add all the ingredients to your Tesco, Ocado etc. baskets.
