The founder and distiller at Crafty Distillery, Graham Taylor and Craig Rankin, went through 90 different recipes before narrowing it down to 3. From here, they sent out a tasting pack to members of the general public and asked for feedback on what they liked. It was this feedback that allowed them to settle on the unique combination that makes up the body and balance of Hills & Harbour Gin.
The recipe that they settled on mixes a range of fresh botanicals from the surrounding area with their own base spirit. Alongside standard juniper sits seaweed (from the harbour nearby) and pine (from the hills). Hence, Hills and Harbour. The result is fantastic, and the beautiful bottle doesn't hurt either.
Just across the border in the West of Scotland, the folk at Crafty Distillery have been busy making gin the proper way. Using local grain, they make their own base spirit - "it's a bit of a faff, but if it's worth doing, it's worth doing properly".
